A distillery at the edge of Scotland

Highland Park sits in Kirkwall on Orkney, the group of islands off Scotland's far north coast. It is one of the most northerly whisky distilleries in Scotland, and its windswept island home shapes everything about the whisky made there.

Born from a smuggler

The distillery's story begins in 1798 with Magnus Eunson. By day he was a butcher and a church officer. By night he was an illicit distiller and smuggler, and that year he was caught making whisky illegally on the site where Highland Park stands today. The distillery received its official licence in 1826 and is now owned by the Edrington Group, which also owns The Macallan.

Orkney peat

Highland Park uses local Orkney peat, which contains more heather than the peat found in many other parts of Scotland. That gives its smoke a sweet, floral, aromatic character rather than a medicinal one. Orkney was ruled by Norse earls for centuries, and Highland Park celebrates that Viking heritage across its range.

The Viking Legend trilogy

Between 2017 and 2019, Highland Park released the Viking Legend series, a trilogy of whiskies inspired by Norse mythology:

  • Valkyrie (2017), matured mainly in European oak sherry-seasoned casks
  • Valknut (2018), using American oak sherry-seasoned casks and Orkney-grown tartan barley
  • Valfather (2019), the third and final chapter

Each release used more of the distillery's heavily peated malt than the one before, so the smoke builds through the series. Master whisky maker Gordon Motion described the trilogy as more of a cousin to the core range than a sibling.

Valfather: named after Odin

Valfather, meaning "father of the slain", is another name for Odin, the most powerful of the Norse gods. The whisky draws on the legends of Ragnarök, the great battle at the end of the Norse world, and on Valhalla, Odin's hall of fallen warriors.

When it launched in August 2019, Highland Park called Valfather its most heavily peated whisky to date. It is a no-age-statement single malt matured in refill casks, which let the peat smoke and the spirit shine rather than heavy sherry. It is bottled at 47% ABV, and launched at around £60 a bottle.

Packaging carved in stone

The Viking Legend bottles were designed with Danish designer Jim Lyngvild. Valfather's design was inspired by the Stora Hammars picture stones on the island of Gotland in Sweden, ancient carved stones that tell stories from Norse legend.

In the glass

  • Nose: crisp apple and sweet, fragrant pear
  • Palate: creamy vanilla crème brûlée, toasted cedar and a touch of warming paprika
  • Smoke: Highland Park's aromatic heather peat, richer here than anywhere else in the trilogy
  • Finish: long and floral
