Named after the water it overlooks
Caol Ila sits near Port Askaig on the north-east coast of Islay, looking straight across the narrow strait that separates Islay from the island of Jura. Its name comes from the Gaelic for "Sound of Islay," the stretch of water right outside the stillhouse windows.
Founded in 1846
The distillery was founded in 1846 by Hector Henderson. It draws its water from Loch nam Ban, in the hills above the distillery, and for most of its life it worked quietly in the background of Scotch whisky.
Rebuilt for a bigger future
In 1972 the original buildings were demolished, and a larger distillery designed by George Leslie Darge was built in their place. Production restarted in 1974. Today Caol Ila has a capacity of around 6.5 million litres a year and is often described as the largest malt distillery on Islay. It is owned by Diageo.
The hidden heart of famous blends
Around 95% of what Caol Ila makes goes into blended whisky, including Johnnie Walker Black Label. That means many people have tasted Caol Ila's smoke without ever knowing its name. The single malts, like the Distillers Edition, are the chance to taste it on its own.
The Distillers Edition
The Distillers Edition takes Caol Ila's classic smoky Islay spirit and gives it a second maturation in casks that previously held Moscatel, a sweet, fortified wine. This double maturation adds a layer of honeyed, grapey sweetness on top of the distillery's coastal peat smoke. It is bottled at 43% ABV and released as a dated edition.
In the glass
- Nose: gentle, lasting peat smoke with floral notes, honey and a soft grape-like sweetness from the Moscatel casks
- Palate: a full wave of smoke with sea salt, orchard fruit, honeyed raisins and soft oak spice
- Finish: long and lightly sweet, fading into briny smoke, dried fruit and warm oak
